You’ll need: 1 tablespoon olive oil, 1/4 cup chopped onion, 2 cloves garlic, minced, 1 (14.5 ounce) can diced tomatoes with their juice, 1/2 cup dry white wine, 1 teaspoon sugar, 1 teaspoon salt, 1/4 teaspoon black pepper, and 1/3 cup chopped fresh parsley. Next, heat the olive oil in a large saucepan over medium heat.
Add the onion and garlic and cook until softened; be sure not to let the garlic burn. Stir in the diced tomatoes with their juice and bring to a simmer. Add the white wine and sugar and simmer for about 10 minutes more.
Season with salt and pepper to taste. Finally, stir in the chopped parsley just before serving. This Alla Romana sauce is best served freshly made; however, leftovers will keep in the fridge for up to 3 days or so.
