5. In a separate bowl, beat egg whites until stiff peaks form. Gently fold into batter until evenly combined.

6. Divide batter evenly among prepared muffin cups, sprinkle with remaining chocolate chips on top of each cupcake.

7 Bake until a toothpick inserted into the center of each cupcake comes out clean, about 18 minutes. Allow to cool completely before frosting or serving plain.

1/2 cup full-fat sour cream, at room temperature

3 tablespoons milk, at room temperature ( I used non-fat)

Instructions:

Preheat oven to 350°F (177°C). Line a 12-cup muffin pan with cupcake liners. Set aside.

In a large bowl, whisk together the flour, baking powder, baking soda and salt. Set aside.

In the bowl of your electric mixer, beat the butter on medium speed until creamy. Add 1 cup granulated sugar and beat until light in color and fluffy, about 3 minutes. Beat in eggs one at a time then stir in vanilla extract and green food coloring gel (if using).

With the mixer on low speed, alternately add the dry ingredients and wet ingredients to the batter in three additions each; beginning & ending with dry ingredients. Do not overmix! Stop mixing as soon as you see no more streaks of flour; use a rubber spatula to give it a final mix by hand if necessary. Fill each liner about 2/3 full (I use an ice cream scoop) then bake for 18 minutes or until an inserted toothpick comes out clean or with just a few moist crumbs attached. Allow to cool completely on wire racks before frosting.
