Fill bottles/keg leaving about 1 inch of headspace . Cap bottles/keg securely . Allow bottle-conditioned beer at least 2 weeks (preferably longer) to properly carbonate , then refrigerate and enjoy!

American Light Lager Recipe Ingredients: 6.6 lbs.

Pilsner malt 1.0 lb. Rice Hulls

4.0 oz. Magnum hops (bittering) 2 tsp Irish Moss

1 pkg American Ale yeast WLP001 or White Labs WL001 Directions: Mash all the grains at 152F for 60 minutes then raise to 168F for mash out.

Sparge with 170F water to collect around 6 gallons (23 liters) of wort into your brewpot then add enough additional water to make a pre-boil volume of 7 gallons (26 liters). Preheat your oven to 200F and warm your carboy/fermenter in there as well while you wait for the boil to start, this will help avoid shocking the yeast when pitching later on. Bring the wort up to a boil and once it’s boiling, remove from heat and add 4 ounces of Magnum hops then put the lid on for 30 minutes, this is called a hop steep/stand.

After 30 minutes, remove lid and bring back up to a boil then add 2 teaspoons of Irish moss stirring it in well. Set timer for 15 minutes and start heating 2 gallons (7.5 liters)of bottled spring water or reverse osmosis water in another pot on the stove, we’ll be using this for cooling later on down in step 10 so get it started now but don’t let it come to a boil! With 5 minutes left in the boil, add 1 ounce of Magnum hops then stir well making sure they’re fully submerged then turn off heat when timer goes off completely*.

Now we need to cool our wort as quickly as possible so it doesn’t pick up any off flavors from sitting at too high of temperatures too long which could make our beer taste “cooked.”
